- Rapid pre-cooling before commercial dispatch and maintenance of the cold chain throughout all handling stages.
- Uniform temperature inside storage chambers is critical — Dynamic Cooling is strongly recommended.
- Cooling should be achieved with low-velocity air movement.
- Ethylene removal is essential.
- Maintain moderate CO₂ levels (5–8 %) — helps preserve quality. Levels above 10 % may cause flavour deterioration.
- Harvest persimmons unripe with flesh firmness > 3 kg force and soluble solids < 18 °Brix (e.g., Fuyu variety).
- Ripening of unripe persimmons can be achieved at 20 °C with 5 ppm ethylene for 3 days.
- Disinfect cold-storage chambers before use.
