  • Maintain the cold chain consistently throughout all handling and transport stages.
  • Rapid cooling helps prevent gray mold (Botrytis cinerea) development.
  • Uniform temperature inside the storage chambers is essential — the use of Dynamic Cooling is strongly advised.
  • Keep CO₂ levels very low through proper ventilation; excessive CO₂ causes flavor degradation.
  • Ensure cooling is achieved through low-velocity air circulation.
  • For long-term storage, use chambers equipped with Dynamic Controlled Atmosphere systems.
  • Ethylene removal is necessary to prevent premature ripening.
  • Always disinfect cold rooms before use.
