General Tips for Broad Beans

Storage temperatureRelative Humidity (RH)DurationPre-coolingSensitivity to ethyleneEthylene ProductionControlled Atmosphere
Storage temperature: 4,5° - 5,5° C
Relative Humidity (RH): 90%-95%
Duration: 2-4 weeks
Pre-cooling: Air cooling
Sensitivity to ethylene: Medium
Ethylene Production: Low
Controlled Atmosphere: Not recommended

Dynamic Pre-Cooling (High-Suction Capacity Chambers): Specialized study of air velocity and cooling rate ensures uniform temperature reduction throughout the product mass — suitable for both packaged and unpackaged beans.

Reinforced Cold Room: Enables the existing refrigeration system to perform light pre-cooling followed by long-term storage without additional equipment.

Controlled Atmosphere: Optimal composition is 2%–5% oxygen (O₂) and 4%–8% carbon dioxide (CO₂), which helps preserve the natural color and freshness of the beans.

IMPORTANT TIPS
  • Pre-cool rapidly in Dynamic Pre-Cooling chambers and maintain the cold chain throughout all storage and transport stages.
  • Wash beans after harvest with cold water, optionally containing approved low-residue disinfectants or fungicides.
  • Dry with cool air immediately after washing.
  • Install ozone generators to control fungal growth.
  • Disinfect cold rooms before each use.
  • Manage CO₂ levels generated by respiration to help maintain color and freshness.
  • Use modified atmosphere bags to extend shelf life.
  • Avoid storing with ethylene-producing products.
